I’ve never ridden a long gravel ride, but have done plenty of 400K and longer brevets.
In my opinion you don’t really need to ride long slow hours to prepare for these events. The best endurance condition I’ve had came from short high-intensity rides. Almost entirely 20-30 mile fast after-work rides, with only the occasional (maybe once/month) longer ride (100+ miles).
My guideline is that, within reason, if you can ride n miles comfortably spread over a week, you can ride n miles in a day less comfortably. Everyone’s physiology is different, but by way of example my after work rides would hover around 22mph for 60-90 minutes, and this might translate to 18MPH for 250 miles.
